Soya Bean Vegetable Soup
1 cup cooked Soya beans slightly mashed
1 cup chopped celery
1 cup diced carrots
1 cup broccoli, cauliflower, leek
½ cup mixed parsley & onions
3 cups vegetable stock or water
1 tbsp miso
1 tsp favourite herb (thyme, marjoram, sage, oregano etc.)
3 tbsp tamari/shoyu
½ cup cooked brown rice
Put Soya beans in a pot with 2 cups water/vegetable stock, bring to boil and simmer.
Mix in miso, rice, vegetables and 1 cup water allow to simmer for 5 minutes reduce to low heat, add parsley, onions, spices and shoyu, leave on low for 20 minutes. Serve with bread.
Will store in the fridge for over a week.
