Tossed Avocado Rice Salad
white or brown rice
grated lemon peel
sunflowers seeds
celery cooked kidney beans
spring onions
avocado
White or Brown Rice - cook and cool.
Mix with grated lemon peel.
Place toasted sunflower seeds, celery, kidney beans and spring onions into a bowl. Peel, stone and roughly chop the avocado.
Add to the vegetables with the lemon juice and a vinaigrette dressing and mix well. Arrange a circle of rice on two plates and fill the centres with the avocado mixture. Serve immediately.
