Tomato and Basil Salsa
4 tomatoes
3 spring onions
¼ cup fresh coriander
¼ cup fresh basil
1 tbsp fresh oregano
3 gloves garlic, finely chopped
1 tsp jalapeno pepper, finely chopped
1 tbsp olive oil
2 tsp fresh lime or lemon juice
salt, ground black pepper
Cut tomatoes lengthwise and remove the seeds.
Dice the halves and place in a bowl.
Add the remaining ingredients and allow to sit for several hours at room temperature to let the flavours blend.
Serve as is or chilled, perfect with nachos, fritters or vegetables.
