Walnut & Apple Spice Pudding
75g butter
½ cup soft sugar (or honey, rice malt)
1 egg
½ cup flour (1/2 cup rice, ¼ buckwheat if Gluten free)
½ cup walnut flour
1 tsp ginger, nutmeg, cassia, cardamom
½ tsp cloves
¼ cup milk (soy or rice is fine)
4 tbsp chopped walnuts
2 apples, grated
Place butter and sugar in a bowl and beat till light and fluffy.
Beat in egg, flour, and spices.
Stir in milk, walnuts and apple.
Mix well.
Spoon batter into a greased budding basin, cover then place in a baking dish with 4cm boiling water in the base.
Bake approximately 1 ½ hours or until cooked when tested with a skewer.
Allow to stand in basin for 10 minutes, then turn out and serve.
