Tofu Cheesecake
crust:
your favourite cheesecake crust
filling:
500 g tofu
¼ cup minced raisins
1 ½ tsp sugar or honey
1 tbsp lemon juice
½ tsp lemon rind
½ tsp vanilla essence
1 tbsp tahini
1/8 tsp salt
1-2 eggs (optional, it will set without them)
1 tsp white wine
1/4 cup minced walnuts
Combine in a blender and puree till smooth.
Press the crust mixture into a tin.
Spoon in the filling and bake for about 25 minutes at 175 C,
the surface should be slightly browned.
Cool for 6-8 hours before serving
Banana, chocolate or other flavourings may be used in the filling.
