Baked Rice Pudding
3 cups cooked brown rice
2 cups soy milk
pinch of salt
¼ cup malt or grain syrup
1 tsp vanilla extract
1 tsp grated lemon zest
½ cup raisins
Preheat the oven to 325 F.
Oil a medium, deep baking dish.
In a bowl combine all of the ingredients.
The mixture should be runny enough that there is a thin layer of liquid on the surface.
Cover and bake for 40-50 minutes until the top is browned.
