Pilau Rice
2 onions halved and sliced
3 tbsp vegetable oil
1 cup frozen peas
½ tsp curry powder
10 black peppercorns
3 whole cloves
½ tsp turmeric
1 ½ cups grated fresh coconut
½ tsp sea salt
½ cup chopped toasted almonds
½ cup chopped toasted cashews
3 cups cooked brown rice
Sauté the onions in the oil until golden. Add all the remaining ingredients and blend well. Stir in ¼ cup water. Cover and simmer for 4 minutes or until the water is absorbed. Remove the cloves and serve immediately.
